The basic conditions and actual pollution of the plant protection chemicals, bacteria in the foods at street food businesses was under Lai Chau town

The research was carried out by co-authors Ninh Thi Nhung (Thai Binh Medical University), Duong Ngoc Huong (Lai Chau Agency of Food Safety) and Nguyen Xuan Thuc (Bach Mai Hospital) to determine the real pollution of the plant protection chemicals, bacteria in the foods and background conditions of the street food business in Lai Chau town.

The study was implemented at the street food business in Lai Chau town. Study period was from 5/2010 to 7/2010. Study subjects were vegetables, fish and products of fish, and meat.
The applied techniques included the tested food sampling techniques in accordance with the regulations of FAO - 1988. The sampling techniques cultivated bacteria to determine bacteria /1g finished product: According to the routine of FAO, determining E. coli in the foods (According to Vincent method), testing rapidly the plant protection chemicals, a group of organic phosphate and carbonate in vegetables, fresh fruits.
Research results showed that the polluted rate of E coli in the food: the overall infection rate was 38%, on fish and fish products was over 40%, meat and meat products was 34, 3%, boiled vegetables was 40%; the highest level of E coli infections in fish was 165 bacteria, the meat was 28 bacteria, the boiled vegetables was 21 bacteria. Rate pollution of the plant protection chemicals: the overall pollution rate on vegetables was 16.6%. In which, the chemical pollution on leaf vegetables was 15%, vegetables and fruit was 25%, vegetables eaten raw was 10%. The street food business abided by the regulations of hygiene and food safety such as covering-up was 84%, the high table of the abided regulations was 92 %, especially 100% of the business used plastic bags and boxes to package foods. They did not use newspapers to wrap foods. |
