Workshop on Technology for producing products containing hydrolyzed protein, chitosan from shrimp shell by-products

Within the framework of the Technology Exchange activities in 2024, in order to connect the supply and demand of technology and equipment, Ho Chi Minh City Science and Technology Information and Statistics Center (CESTI) collaborated with Vietnam Food Joint Stock Company to organize a workshop on "Technology for producing products containing hydrolyzed protein, chitosan from shrimp shell by-products."

According to data from the Ministry of Industry and Trade, the number of by-products in the shrimp processing industry could reach 450,000 tons by 2025. Vietnam Food Company (VNF) has researched and produced value-added products from raw materials of shrimp heads and peeled shrimp shells, such as Chitin, Chitosan, Hydrolyzed Protein, Astaxanthin, and etc. applied in many different fields.
For the livestock/aquaculture industry: VNF's hydrolyzed protein from shrimp protein is produced using deep hydrolysis technology with special enzymes, creating animal feed additives containing free amino acids, short-chain peptides that are easy to digest, absorb, have high attractiveness and many biological activities. Astxanthin is produced through oil solvent extraction technology to ensure stability and biocompatibility.
For the farming industry: Chitin and chitosan are multifunctional biological polymers extracted from shrimp shells through demineralization, deproteinization and deacetylation processes. The resulting products are biological pesticides/fungicides, growth stimulants, post-harvest preservatives, etc., and microbial soil improvement products. These are highly effective biological solutions, reasonably priced, safe for farmers, and environmentally suitable for organic and sustainable farming.
The workshop hopes to cooperate with businesses in aquaculture, animal/aqua feed production and products applied to cultivation.
